A born restaurateur, Tyson Blume has deep roots in the Fraser Valley agro-culinary scene.  During his childhood in Campbell River, he fell in love with the coastal bounty that BC has to offer.  After cutting his teeth in various Semiamhoo Peninsula eateries, Tyson set off for Europe where he trained in Michelin starred German restaurants.  Upon his arrival back in BC he helmed The Cannery and Joe Fortes’ – two of Vancouver’s most iconic restaurants – before returning to White Rock to bring new life to the famous Uli’s Restaurant.  Throughout this journey, Tyson forged the dedication to outstanding quality which now serves as the foundation upon which Beast & Brine stands.

Becoming the face of Beast & Brine is a natural step for Jennie Silk.  A born cook and entertainer, Jennie pursued training in Culinary Management at Georgian College in Barrie, Ontario.  Upon receiving her Diploma, she moved to Vancouver and immersed herself in the deli and cheese world at Meinhardt Fine Foods.  Jennie next moved to White Rock, where she became manager at Straight from the Hearth bakery – as well as co-proprietor of Mango and Chocolate catering.  After a few years off to concentrate on the birth and early childhood of her daughter, Jennie returned to the culinary world as sous-chef of White Rock’s Uli’s Restaurant.  With an in-depth knowledge of meat and cheeses and a legendary flair for party-throwing, Jennie is sure to delight everyone who walks through the doors at Beast & Brine.
